I’m not really a breakfast type of girl and a lot of people tell me they aren’t either. It’s that meal that either gets skipped or I buy something in the morning that usually isn’t so healthy, like a muffin or a Cheese Danish. I was organizing my kitchen pantry the other day and I found a lot of dried foods in there: brown rice, couscous, almonds, steel cut oats, pasta, lentils, trail mix. The list just goes on and on. I started a little search online on what I can do with some of the items and found some great recipes. You can do so many things with brown rice, even have it for breakfast aka rice porridge.
I decided it was time to save some money and start using some of the foods I had just sitting there. I started with my steel cut oats. I cooked a whole pot of steal cut oats the following morning. As the oats were cooking, I added a tablespoon of local raw honey, threw a handful of cranberry/almond/peanut trail mix in there and frozen blueberries. Frozen blueberries are a cheaper option to fresh blueberries and worked out beautifully. You don’t have to do anything, they will just thaw in the hot oats. I was also very happy with how the trail mix worked out with the oats.
Here is what I used for this quick oatmeal (multiply the ingredients by however many servings you want to make)
- 1 serving of steel cut oats (1/4 c dry)
- handful of cranberry/almond/peanut trail mix
- 1 tablespoon of honey
- 1/2 c water or milk to cook steel cut oats in
- handful of frozen blueberries
After adding the blueberries their juice will change the color of the oatmeal which is pretty awesome. You can add more water/milk depending what your favorite consistency is. Mine came out pretty thick and looked like this:
I was pretty happy with this little meal. I am starting to like the idea of batch cooking. For instance, cooking enough oatmeal to last me three days. This way I can stick it in the fridge and have it ready to go every morning. This works for me and saves me times. My rice porridge recipe came out pretty well too, will post about it soon.
